Ingredients

  1. Cut the eggplants into thick slices of 1 cm and place them in a large baking pan.
  2. Cut the Scamorza into small cubes, then wash the tomatoes and cut them into quarters.
  3. Bake the eggplants in a preheated oven at 200 degrees Celsius for 20 minutes.
  4. When the eggplants are baked, add the tomatoes, the Scamorza and the basil and bake again until the cheese is completely melted. At this point, remove the eggplant from the oven and serve hot.
