Start by boiling the water for the rice and when it has started boiling pour all the rice int the pot.
In the meanwhile place olive oil on the surface of an oven tray and pour on it the peppers, the eggplant and the tomatoes, cut the basil leaves in small pieces and place them over the vegetables and pour over them salt and pepper and a bit of olive oil. Put the tray in the oven and roast the vegetables until they are soft.
When the rice has boiled, pour it in a colander and the in a big bowl. If the vegetables are roasted pour them in the bowl with the rice and mix well. Serve the delicious brown rice with the vegetables when it is warm.
