  1. Wash the eggplants and cute them in half, then soak them in water and bake them at 200 degrees Celsius for an hour until they are fully cooked.
  2. With a spoon remove the pith from the eggplant. Finely chop the parsley and place all the ingredients in mixer, then crush them until they become a cream. Store the mix in the fridge and serve the salad when it is cool.
