Break the eggs and divide the egg whites from the yolks, then pour the egg yolks in a bowl and mix them with a fork, after add the milk and melted butter.
Mix well all the ingredients and then add the yeast and flour that you have previously mixed and sifted.
Whip the egg whites with the salt and sugar and add them to the mixture of milk, butter, eggs and flour, very gently with a movement from the bottom upwards.
Put to heat over medium heat in a non-stick pan (preferably one with a thick bottom) with a diameter of 10-12 cm and brush with a little butter. Pour in the center of the pan a ladle of the mixture and let it alone to expand.
When the pancake is golden, turn it on the other side by a spatula, like a crepe and then turn also the other side and after when they will be ready remove them from the pan.
Repeat the process about 12 times to form 12 delicious pancakes and add syrup, honey or your favorite jam on them.
