To prepare the penne all' arrabiata, start by cleaning and cutting the tomatoes in cubes.
Then take a high-sided pan, fill it with water, bring it to a boil and blanch the tomatoes for a few seconds.
Then take a hot pepper, cut it in half and in small strips. Now take a pan, add the oil and sauté a clove of garlic (whole or crushed depending on your taste) with the seeds of the pepper and stir well with a wooden spoon to avoid burning.
Then add the diced tomatoes and cook for a few seconds, stirring well with a wooden spoon to allow even cooking. Season with salt and pepper.
When cooked, remove the garlic. Meanwhile, take a high-sided saucepan, add water and bring to a boil. Pour the pasta and cook. When it is cooked, drain it and add it to the pan with the sauce.
Add the chopped fresh parsley and mix the ingredients well. Serve and then add the grated cheese.
