  1. Start by boiling water in a big pot and when it has started to boil, pour the rice in it, adding some salt and leave it to boil.
  2. In the meanwhile pour the olive oil in a pan and fry the onions for 3-4 minutes, then add the pieces of chicken breast and the curry powder and cook them well, when they are ready add the cashew and cook for 2 more minutes.
  3. When the rice is done pass it through a colander and divide it in two glass bowls and leave it there for about 5 minutes.
  4. Then turn the bowls upside down on two plates and place the chicken breast and cashew sauce around the rice, like in the picture and enjoy your meal.
