  1. Start by washing the zucchini and cutting them into small cylinders, then wash the carrots, remove their skin and cut the into small cubes, then cut the sausage into small slices.
  2. In a pot start boiling water and when it is ready pour in the rice and let it boil, stirring well from time to time.
  3. Meanwhile the rice cooks, pour the olive oil in another pot and then cut the half onion in small pieces, add it to the pot and fry it for about 2 minutes until it starts smelling, then pour in the carrots, the peas, the kidney beans, the sausage and the zucchini, mix them well and add water to cover the vegetables, add also salt an pepper, stir and let them boil, adding water from time to time if the vegetables are not cooked and the water has been evaporated.
  4. When the rice is done remove it from the pot and leave it on a colander. Then when the vegetables are boiled remove them from the pot and place them on a big bowl, then add the rice to the bowl and mix well, then serve the food.
