  1. Start by cleaning the potatoes and peeling them, then when you are done, place them in a big bowl with water. In the meanwhile peel the carrots and then put the rosemary, some salt and some pepper on a small bowl, place the chicken thighs inside it and mix well.
  2. Remove the potatoes from the water and pass them through a colander, then place a baking paper on a large oven tray and place on it the potatoes, carrots and the chicken thighs and cook them in the oven until the chicken thighs get a golden color and until the potatoes are done.
  3. Serve the food on two plates and optionally decorate with some olive oil.
